Veggie Lo Mein

Veggie Lo Mein is the best homemade Chinese take out fake recipe I have ever made. I make Chinese take out fake out recipes often. We love fried rice, sesame chicken, beef and broccoli, orange chicken, lettuce wraps, veggie stir fry, etc. I prefer to make them at home because I can control the fat, salt, and sugar in my recipes. Healthy Chinese at home. Yes, please!

Quinoa Chicken Soup for the Soul

Quinoa Chicken Soup 2

Its been really gloomy and rainy this week. Cold, cloudy, grey days make me think of soup. A nice steaming bowl of chicken quinoa soup with a piece of honey wheat bread fresh from the bakery. Doesn’t that warm you up just thinking about it?

I have something to say that not everyone is going to like…. Ahem, back off of the pumpkin spice!

Okay, okay, please put down the torches and pitchforks. Let’s not get overly dramatic here.

Baked Chicken Tenders with Honey Mustard Sauce

Baked Chicken Tenders

Chicken tenders bring me back to my childhood. They’re a fun, hand held, dip-able dinner. That really is the best part right? You get to dip them in so many sauces. When I was a kid, I would always try to get one of each sauce to dip my chicken nuggets in. Yes, one sauce cup per nugget/tender. Anyone else out there a sauce enthusiast? Anyway, this is my favorite honey mustard dipping sauce. Its zippy with just the right amount of sweetness.

Chicken Fajitas

Chicken Fajitas 3

Chicken fajitas are one of the best meals to make when you have company coming over. You can prep all of your toppings and sauces before anyone comes over. Put them right into the serving dishes and pop them into the fridge until your ready. The chicken and veggies only take about 10-15 minutes to cook.
