If you are looking for a cozy fall pasta dish or a meatless Monday dinner that will satisfy the carnivores in your life, look no further. If I could, I would eat Creamy Butternut Squash Penne with Rosemary and Parmesan every single day. The creamy dreamy sauce is made without the addition of butter, cream, or a roux. It is Vitamix magic at its best my friends. The addition of a cheesy panko crust on top adds the perfect amount of crunch. Serve with a fresh green salad for a hearty vegetarian dinner.
Veggie Lo Mein is the best homemade Chinese take out fake recipe I have ever made. I make Chinese take out fake out recipes often. We love fried rice, sesame chicken, beef and broccoli, orange chicken, lettuce wraps, veggie stir fry, etc. I prefer to make them at home because I can control the fat, salt, and sugar in my recipes. Healthy Chinese at home. Yes, please!
Happy Wednesday, my fellow foodies! I hope your weekends were full of friends and fun. We had a full apartment Sunday for a Fantasy Football Draft party. Now, I’m not a huge football fan, but I am a fan of football food. Pizza, wings, sandwiches, buffalo chicken everything, and ALL of the dips… spinach artichoke, guacamole, salsa, layered taco, hummus, queso…I could go on and on.
Turkey sausage and kale pasta toss is the perfect weeknight meal. It is packed with greens, savory turkey sausage, and cheese. You cannot go wrong with this one! Just remember, pasta, and Italian food in general, is all about simplicity and balance. Good quality ingredients are key.
Baby, it’s cold outside…and snowy…and windy. I don’t know about you, but this weather makes me want a nice comforting meal. A nice comforting meal without all of the extra calories of a nice comforting meal. Doable? Oh yeah.
