Chicken tenders bring me back to my childhood. They’re a fun, hand held, dip-able dinner. That really is the best part right? You get to dip them in so many sauces. When I was a kid, I would always try to get one of each sauce to dip my chicken nuggets in. Yes, one sauce cup per nugget/tender. Anyone else out there a sauce enthusiast? Anyway, this is my favorite honey mustard dipping sauce. Its zippy with just the right amount of sweetness.

Chicken fajitas are one of the best meals to make when you have company coming over. You can prep all of your toppings and sauces before anyone comes over. Put them right into the serving dishes and pop them into the fridge until your ready. The chicken and veggies only take about 10-15 minutes to cook.

Brushetta Turkey Burgers with Pesto Aioli

Whenever I make turkey burgers, I like to add a ton of flavorful toppings because a plain turkey burger can be a little sad on its own. In this case, I added a garlicky, balsamic marinated tomato bruschetta, creamy pesto aioli, and basically turned the bun into garlic bread. Okay I like garlic, a lot a lot. But don’t worry, it isn’t too in your face here. There is a nice balance between all of the components. Oh, and the fresh mozzarella? Please, use fresh mozzarella. It will melt infinitely better than the pre-shredded kind. Plus, all you have to do is slice it which only takes a minute. And have a glass of wine while your cooking. You deserve it.

Slow Cooker French Onion Pot Roast

I love my crockpot. Its nothing special really. It doesn’t have any stirring features. There aren’t any bells or whistles. However, it makes my life a hell of a lot easier during the week. It only takes me 10 minutes in the morning to throw this recipe together. Brown the roast, sprinkle in spices, onions, and beef stock; and you are all set. When you get home eight hours later, you will be greeted with the delicious smell of pot roast simmering away. The meat just falls apart and the au jus is packed with flavor.

Gimme Pizza… P-I-Z-Z-A

Yes, that is an Olsen twins reference. Did anyone else grow up wanting to be an Olsen twin? I know it wasn’t just me. Every time I make pizza from scratch, I can’t help but think of that song… and sing it a little, maybe.

The pizza dough takes a little time to rise, but other than that it is a simple straightforward recipe.
