Mushroom and Turkey Lettuce Cups

Ahhh, the month of January. Health food month. I kicked off the new year with a bit of a cleanse. It was a 3 day liquid diet filled with smoothies and soup. I would say it really worked for me. Yes, I lost some water weight that comes back when you start to eat normally… I know. However, taking those 3 days to really zone in on what I was eating helped to refocus myself on my fitness goals. I feel the best when I am eating healthy. (Yeah, nothing really groundbreaking about that one, but it is true!)

Since then, I have been cutting back on my heavy carbs in the evening. So at dinner, I have been shying away from things like tortillas, bread, buns, etc. However, I never want to feel deprived. Queue the lettuce wraps. For some reason being able to pick these up and eat them is more satisfying to me then eating them knife and fork style. Anyone else? Try it! Let me know what you think. These are so delicious, pretty, and fun to eat!

Creamy Vegan Lentil Soup

I did not intend for this soup to be vegan. That was just a happy coincidence. I’ve had a bag of red lentils just sitting in my pantry for a while now…maybe 6 months? I bought them on an ooh-this-week-I’m-going-to-eat-super-super-healthy kind of a whim. Sadly, they ended up pushed behind a box of whole wheat fusilli… until this week. I also had a bag of carrots to either eat or pitch that day. (I hate throwing away food!) And so, this delicious, creamy soup was created out of pantry items. Oh, and its super quick and easy. Yay for accidental vegan meals!

Roasted BBQ Chicken Thighs

This morning I woke up ready to conquer the day. I did an hour of blogilates (thanks Cassie!), got ready, and even ate breakfast at home. I’m usually more of a quick smoothie in a travel mug kind of girl. Then, I get to work and I realize…. I totally forgot to put the chicken in the crock pot. How did I forget to put the chicken in the crock pot?! It was going to be a delicious bbq pulled chicken on a sandwich thin with some crunchy, refreshing broccoli slaw. The chicken thighs would cook all day until they were falling apart, but they never made it to their slow cooker destination. So, on to plan b. Roasting! Roasting veggies, meat, anything really is one of my all time favorite cooking methods. Crank the oven to 425, season, pop the chicken thighs in, flip halfway through and you are done. Low maintenance, just like my no heat curls today.
