Chicken Tostadas

Happy Saturday! Looking for an easy dinner that won’t have you slaving away in the kitchen all afternoon? This is the one for you. These tostadas are quick, but they come out looking beautiful and delicious. Use leftover or rotisserie chicken to get dinner on the table in under 30 minutes.

Corn tortillas

cooking spray

Rotisserie chicken

1 can Refried Beans

1 tsp cumin

½ onion diced

2 cloves of garlic, minced

salt and pepper

your favorite hot sauce

1 cup shredded Monterrey jack cheese

Greek yogurt

Preheat the over to 400.

Place corn tortillas on a baking sheet and spray both sides liberally with cooking spray. Toast in the oven until crispy, flipping halfway through. This will take about 5-10 minutes.

Meanwhile, on medium heat, saute the onions with salt and pepper for 5 minutes. Add the garlic and cumin. Saute for one minute longer. Drop the heat to low. Add the refried beans and hot sauce. Cook on low until heated through. Add salt and pepper to taste.

To assemble the tostadas, spread the beans on the tortillas, layer the chicken and top with the cheese. Pop the tostadas under the broiler until the cheese is melted. Top with salsa,greek yogurt, and cilantro. Enjoy!
