This is the easiest 20 minute soup ever. Anyone can make it. Well, anyone who can chop an onion and boil stock. It really is that simple. The soup comes out looking elegant and would be a lovely recipe to showcase homemade tortellini… if you happen to have any lying around.
First, heat a large soup pot to medium heat. Then, add 1 tablespoon of olive oil, ½ cup of chopped onion, and a pinch of salt. Stir and let the onions cook for about 5 minutes. You want the onions to be tender.
Add 8 cups of broth, turn heat to high, and cover until the broth comes to a boil.
Add 1 bag of frozen cheese tortellini and 2 cups of spinach. Cook 3 minutes or until tortellini are tender. Garnish with freshly grated Parmesan, flat leaf parsley, and cracked black pepper. Enjoy!
1 tbs olive oil
8 cups vegetable broth
1 bag cheese tortellini
½ cup chopped onion
2 cups spinach
Parmesan Cheese
salt and pepper
flat leaf parsley
1. Heat a soup pot to medium. Add 1 tbs olive oil and 1/2 cup finely chopped onion. Let the onions sweat 5 minute, stirring occasionally.
2. Add 8 cups of stock and bring it up to a boil.
3. Add the spinach and tortellini. Cook tortellini in the stock according to the package instructions. Mine said 3-4 minutes.
4. Garnish with flat leaf parsley, Parmesan cheese, and black pepper.

MMM looks amazing! I’ve never thought about using tortellinis soup. It looks like wanton soup.

The tortellini works so well in this soup. It does sort of look like wonton soup with mini dumplings.
