Crockpot Honey Chipotle Chicken Sliders

Looking for an healthy slow cooker dinner? Honey chipotle chicken sliders are easy to whip up in the morning and they will be ready for dinner when you get home.

Toss all of the sauce ingredients into a blender, pour over chicken, and let it simmer in the crock pot. The honey chipotle sauce is deliciously spicy and sweet.

Mix together mayo, vinegar, cilantro, onions, spices, salt, and pepper. The add the bag of cole slaw mix. It really is that simple!

Ingredients:

1 lb Chicken Breast

Honey Chipotle Sauce

Bay Leaf

Honey Chipotle Sauce:

3 tablespoons Honey

2 Chipotles in adobo (seeds removed)

2 tablespoons adobo sauce

1 Onion

4 Garlic Cloves

1 cup Cilantro

Salt and Pepper

1 small can Tomato Paste

1 can chopped tomatoes

2 tsp cumin

1 tbs smoked paprika

Blend together. Pour over chicken in slow cooker and add the bay leaf. Cook on low for 6 hours. Shred the chicken and serve on slider buns with cilantro slaw.

Cilantro Slaw

Slaw Mix

¼ cup minced onion

1 cup cilantro

salt and pepper

½ cup mayo ( You can also substitute plain greek yogurt)

2 Tablespoons apple cider vinegar

1 tsp cumin

1 tsp garlic powder

Mix all of the ingredients together except the slaw mix. Once the dressing is combined, add the slaw mix. Taste and adjust the seasoning if necessary. Enjoy!
