Kelby (the love of my life/ the guy who makes me belly laugh daily/ best friend) used to hate sweet potatoes. I tried every preparation that I could think of… baked, mashed with honey and pecans, plain mashed, etc. It was a sad time. I did not want to make two different types of potatoes forever and I could not give up my beloved sweet potatoes. So, I tried to roast them with a delicious smokey spicy mix. The verdict: he absolutely loves them! This is the only way he will eat them. If you have a sweet potato hater in your life, try this super simple side dish.
Start by peeling and chopping 2 large sweet potatoes.
Drizzle with 1 tablespoon olive oil, a sprinkle of salt, pepper, 1 tsp garlic powder, and 1 tbs smoked paprika.
Add a dash of cayenne or a pinch of chili flakes if you are feeling particularly spicy. Toss to coat the sweet potatoes in the spices and spread into an even layer.
Pop them into a 425 degree oven for 15 minutes, flip and roast for 10 more. (Or until golden brown) Enjoy!
Ingredients:
2 large sweet potatoes
1 tbs olive oil
salt and pepper
1 tsp garlic powder
1 tbs smoked paprika
cayenne/chili flakes (optional)
Method:
1. Preheat the oven to 425
2. Peel and chop the sweet potatoes into 1 inch pieces (about bite sized).
3. Place the potatoes on a baking sheet. Drizzle with olive oil. Sprinkle with spices and toss to coat. Spread the potatoes into an even layer.
5. Roast for 15 minutes, flip, and roast for 10 more. (Or until golden brown) Enjoy!
